The Vegan Valentine Kitchen...

Hello there :)

Where has the week gone I wonder? We have been busy finishing off lessons this week in time for a well earned half-term break. Technically this week should have been the half-term in our county but we were not quite ready to break, so we didn't - the beauty of homeschooling.

We have an art lesson over in Manchester tomorrow so we get to take the most beautiful drive once again over the Pennine's to visit with our dear friends. I had lots of valentine bakes earmarked to get done this week as part of my celebrating-the-year rhythm of life, so I offered to bring some snacks for the teens.


I have spent a wonderful day baking away while my girls sat around the kitchen table completing their lessons. 

One of the children at art is vegan so I get to challenge myself when I do the snacks to explore some baking that is a little different to what I ordinarily do. 

This week I made a heart-shaped cake using a tried, tested and LOVED vegan chocolate cake recipe. The cake has been iced using this delish vegan chocolate icing and then drizzled with some pink tinted vegan royal icing.


Next I tried my hand {for the first time ever} at making some vegan sugar biscuits/cookies. Let me tell you these are so tasty! Best sugar cookie recipe I've come across. In future this is going to be my 'go-to' sugar cookie recipe. I did not use the icing recipe at included with the sugar cookie recipe but rather used the vegan royal icing recipe I found as I wanted to ensure that the icing would set nice and hard.

I roped in the girls to help decorate all the biscuits as my hand was eventually killing me with having to sustain constant pressure on the icing bottles! But despite sore hands I have to say that I am happy with the end result. Lets hope the teens love them too ;)
